Staying on top of those New Year's Resolutions

Since the first month of 2014 has come and gone, how many of you have kept up with your New Year’s resolution? We know it may be difficult to stay focused with eating healthy or continuing to go to the gym for those tiring workouts. For those of you who are trying to get your best body for the big day, but have gotten knocked off the path, these simple motivators are a way to get you back at it!

If you have lost your motivation and do not have the drive to get back in the gym, remember to think positive and envision what goal you are trying to reach. If you feel lazy with your workouts, mix them up and try something new. Find a new fitness class you would like to attend or try a new weight workout to challenge yourself. If workouts become too easy, make sure you are switching things up. If you do not challenge yourself, you will have trouble staying focused and lose motivation.

Lightened Up Creamy Cajun Chicken Pasta



1 lb boneless, skinless chicken breast, cut into small bite-sized chunks

1 tbsp olive oil

1/2 shallot, minced

2 cloves garlic, minced

2 tsp Cajun seasoning, divided

1 cup diced tomatoes

1/4 cup cream

6 oz dry linguine pasta


Cook pasta in boiling salted water. Drain and set aside.

In a large skillet, heat the olive oil over medium high heat. Add the chicken and 1 tsp Cajun seasoning blend and cook until the chicken has just cooked through—about six minutes.

Transfer the cooked chicken to a plate and add the minced shallot and garlic to the hot skillet (add a little more oil if necessary). Saute until the shallot is tender and then add the tomatoes, cream and additional Cajun seasoning. Bring to a simmer and cook, stirring frequently, for a couple minutes. Add chicken back to sauce.

Add linguine to the pan and toss to combine. Serve pasta with a grating of Parmesan cheese if desired.
